In Höflein, at the transition from the Vienna Basin to the hilly landscape of the Leitha Mountains, Robert Payr manages a winery that has existed for generations – to be precise, since the 19th century, although viticulture here in Höflein dates back as far as 1083. The Payr family has always been deeply connected to the region. Today, Robert runs the business – and is much more than “just” a winemaker: he is President of the Rubin Carnuntum wineries, a committed quality ambassador for the region, and a pioneer for sustainable viticulture.
His approach to his work is clear and uncompromising: reduction in the vineyard, selective manual harvesting, and plenty of time for maturation – in the cellar as well as in the mind. What emerges are wines with depth and character. No chichi. No fashionable nonsense. Instead, honest craftsmanship and terroir that you can taste.
At Herzstück, we are pouring his Sauvignon Blanc – cool, clear, mineral. A wine that doesn't want to impress, but rather convince. And that is exactly what we love about Robert Payr: his calmness, his precision, his clear line. At the wine tasting on Friday, he will personally present his wines – perhaps tell us a little about the Spitzerberg, his favorite site. Or perhaps he will simply pour a glass and see what it has to say. That, too, suits him perfectly.
