Thomas Windholz – Our house winemaker

Some winemakers seem as if they were made for exactly this place. That is the case with Thomas Windholz. Growing up in Bruck an der Leitha, socialized between the vineyards and the cellar lane, it was clear early on: this is not just a job. It is a path. One he follows with an alert eye, an open heart, and a healthy dose of wit.

At the Herzstück, Thomas is long past being a guest – he is part of the house. His wines can be found on our menu just as much as his legendary spritzer in the late afternoon. And those who know him know: he doesn't just bring good bottles, he also brings good spirits.

But behind the charm lies precision. Thomas works close to nature, with a strong focus on purity, freshness, and drinking pleasure. His wines are not loud – but they tell stories. Of the soil around Bruck. Of hot days and cool nights. Of experience, but also of the courage to try something new.

We are particularly fond of pouring his Casanova – a red wine with structure and character. But his Chardonnay, the non-alcoholic Scheurebe Frizzante, or his fine Zweigelt Rosé also show: someone here thinks things through, but not too much. Wine is allowed to be light. And still have substance.
